Meyer Lemon Tarts

After finding Meyer lemons in the store and then consulting Twitter about what to make with them, I found a wonderful recipe for lemon curd, which I used to fill some tart shells and then topped with sweetened whipped cream.

Admittedly, I'm not a fan of lemon meringue pie, but these are amazing. As in, so amazing that I ate one, and then promptly ate another. Lemon curd may sound hard and finicky, but it's surprisingly easy!
