Last week a friend of mine gifted me with Jamie Oliver's Recipe Yearbook 2010, which I have been pouring over and putting sticky notes in here and there, marking all the wonderful food that I want to make. After a hike outside in the cold one day, I decided to try out his Spiced Hot chocolate recipe.
Yum! It's a bit different with the cloves, cinnamon, and nutmeg, but delicious. My cocoa was super rich and I found it almost to be too chocolatey for my taste, so I'd probably start with 1 tbsp of cocoa and add more if I felt it was needed.

250-300 ml milk
2 tbsp cocoa
2 tbsp vanilla sugar, or plain sugar
3 whole cloves
Heat the milk with the cinnamon stick, cloves, and a pinch of nutmeg gently over low heat gently for about 5 minutes.
In a different pot, measure out your cocoa. Spoon a little of the hot milk into it and stir to make a paste. Slowly whisk in the rest of the spiced milk. Heat, stirring, and add the sugar.
Strain out the cloves and cinnamon stick before pouring into a mug and topping with fresh whipped cream and chocolate shavings. YUM.
Makes 1 mug
