Food Revolution Friday: Summer Salads

Salads, salads, salads. It's been a salad week. Can you believe I've been home only a full week so far this summer? Between the road trip, then ANOTHER road trip via motorcycle to Calgary, and now working full time for a week, I'm a busy girl.

Cooking on the fly has been a challenge too, so salads it is!

Smitten Kitchen's Carrot Salad with Harissa, Feta, and Mint: I loved it! So delicious. Hubs and Jake aren't fans of carrots, but they ate it anyway.

Jamie Oliver's Chopped Green Salad: I've never seen anything like this. I didn't tell my family this was a Jamie Oliver recipe, I just made it and put it on the table. They dug in, exclaimed about how much they loved it, wolfed it down, and practically licked the bowl. Then they asked where the recipe came from and when I told them, the response was,

"Well of COURSE. That's why it was so good."

Anne's Chicken, Roasted New Potato and Green Bean Balsamic salad: My friend and fellow foodie, Anne is always sending me great recipe ideas or photos of what she ate for dinner. This one was DELICIOUS. I'll have the full recipe up on on Monday, but for now you get to look and drool. Jake said it was like roasted chicken and potatoes all tossed together, which is sort of is, just better!
