Food Revolution Friday: The End? Or Maybe Not!

It's a very good thing that I didn't plan anything really elaborate for Food Revolution Friday, because when my week exploded into phone calls, more twitter messages then I've ever received and my inbox instantly filling, dinner plans kind of fell by the wayside.

Cooking 101: Read the recipe thoroughly so you know that you must marinate the chicken for an hour, or that you need tomato paste for that pasta dish. I didn't do any of this and discovered my mistake at the last second two nights in a row. One night we raided the freezer for leftovers, and another I threw some chicken and pesto thing together. Oops!

This week I made Jamie's One Cup Pancakes. I have a lot of pancake recipes, but we thought we'd try these with some turkey sausages and a frittata. I didn't have mangoes so I didn't go the tropical route with the pancakes, but instead followed Jamie's suggestion of using blueberries instead. They were good! A little heavier than the other pancakes I've made, and without sugar in the batter they weren't sweet. The addition of the blueberries (and the fact I doused mine with syrup) really helped with that. I'm not sure how they would be with whole wheat flour, but it might be an idea to try them with 1/2 cup all purpose flour, 1/2 cup whole wheat flour, and 1% buttermilk.

I would like to try them with mango and coconut yogurt, though. Maybe on a lazy Sunday I'll make some. The recipe was very easy, and didn't make a lot. Jake and Hubs scarfed them down, both saying they thought they were great.

So is this the end, you ask? The finale of Jamie Oliver's Food Revolution is today, and I admit I wish that it would keep going, but..isn't that the point? Don't WE keep it going?

I'm not sure how to give the Revolution a huge push so that it continues after the show, other than just doing what we're doing. So what do you guys think? I'm game!
