Peaches were on sale here and so I picked up a whole 10 pounds, found this recipe, and decided then and there I was SO making them.
This recipe is not for the faint of heart. I found it time consuming, and somewhat frustrating because no matter what I did, the juice in the jars would bubble to overflowing and actually come out of the jars once I pulled them out of the canner, which was really irritating. However, they really are delicious and would be fantastic over frozen yogurt or angel food cake. The rum flavor isn't really strong but it's definitely there.
