Recipe Tuesdays: Crockpot Shredded Chicken Chili AND Pita Chips
The last couple of weeks have been super busy like the end of the school year usually is, and so when I found this recipe I was intrigued. There's something to be said about just popping the ingredients into a crock pot and leaving it, only to come home hours later to a house smelling all spicy and delicious.
And delicious this is! I admit that I had to halve the spices, since Hubs never would have eaten something really spicy. I like spicy, but remembering my encounter with southwestern style chili in the Four Corner's area a few years ago (it was insanely hot), I wasn't going to take the chance. Canadian chili isn't even remotely as hot as chili from the southwest.
The result were still tasty, with a decidedly southwestern flavor to it. Delicious with sour cream, cheddar, and tortilla chips! You'll find the recipe here.
If you are not into buying tortilla chips, I also have a recipe for making your own pita chips. Actually, both of these recipes are so easy that your teenagers could make them no problem.
