What's better on Canada Day then some buttery, maple flavored cookies filled with maple butter cream?
Jake has always liked Canada Day cake, but these cookies had him asking for more. You'll find the recipe here. I considered posting this on Tuesday, but I thought readers would like a bit of extra time so they could make them in time for the actual big day.
They are work intensive, because you are rolling out and cutting the dough into those cute maple leaf shapes, then sandwiching them with the maple butter cream. You could do it in steps though-make the dough and stick it in the fridge one day, roll and bake the next, then fill the next.
They freeze well and were well liked by everyone who tried them.
