Recipe Tuesdays: Carrot Snacking Cake

Looking for a great lunchbox treat, or just a quick dessert? This cake is pretty tasty and so easy to make. It's not too sweet, and the glaze is much lower calorie than cream cheese icing. Sure, traditional cream cheese icing is my hands down favorite, but with summer coming and the idea of bathing suits hanging over my head? I so don't need those calories. Besides, the glaze gives just a perfect amount of sweetness without being too much.

Another plus is this freezes really well for lunch box snacks. I pre-cut the pieces, then put them in a plastic container. Through the week I just popped one out at a time, put the piece in a smaller plastic container, and it went in Jake's lunch. Easy!
