Up here in Canada, we had Thanksgiving, and my family decided to do the turkey dinner thing on Monday, which makes my weekend so much easier because then I can plan ahead!
So here's my menu for the week...
Monday: full on turkey dinner! (see last week for links to recipes)
Tuesday: Turkey leftovers! Yum!
Wednesday: Beef Barley Soup (made ahead and in the freezer) and thick slices of home made foccacia bread
Jake's favorite soup; filling, freezes well and so great for fall lunches.
Thursday: Burritos (made ahead and in the freezer) and Spanish rice (*recipes coming)
The recipe is straight outta my head-but I'll try to write it down for readers. These babies are great freezer dinners, you just pop one in the microwave to defrost and then in the oven for about 15 minutes, top with salsa and a bit of cheese...yum!
Friday: Pan fried perogies with caramelized onions
Straight from the bag into a water bath and then fried up until nice and crispy.
Saturday and Sunday: "fed for yourself from the freezer" nights
Baking, etc: home made canned cinnamon applesauce, pumpkin pie with whipped cream
Well I gotta do something with that 6 lbs of apples hanging out in my fridge, right?
