Cranberry Orange Compote

Cranberry sauce with turkey seems to be sort of like pumpkin pie...people either love it or they hate it. I love cranberry sauce, but I don't love the jellied stuff from a can. Why bother anyway, when you can make your own? This one is an amazing blend of sweet, spicy, orangy flavors all mixed in with the cranberries.

2 1/2 cup fresh cranberries
1/4 cup sugar
2 tsp orange zest
1/2 cup orange juice
1/8 tsp cinnamon
1/8 tsp allspice
1/8 tsp cardamom
1/8 tsp nutmeg

Put everything in a sauce pan and cook over medium heat until it comes to a boil and the cranberries start popping. Continue to cook, boiling gently, until it thickens. You can add more orange juice if you need it more saucy.

Pour into hot sterilized jar up to 1/2 inch from the top and top with prepared snap lids. Process in a boiling water canner for about 5 minutes. Give to friends at Christmas!
