Breakfast for...Dinner?

When you realize that a member of your family has food sensitivities/intolerances, you have to change how you cook. Pancakes? They contain 2 full cups of milk. Occasionally we enjoy a "breakfast dinner" where we have pancakes, hash browns, eggs and fried ham. It's delicious!

Today I experimented and came up with these tender morsels, which are completely lactose free. Jake claimed that they were the best pancakes I've ever made, and I didn't even tell him they were dairy free until he'd already eaten them.
