Jake came across the recipe the other day and insisted that I must make it this Christmas. I'm sharing it with you because, let's be serious, who wouldn't like turtles??
3/4 cup butter, softened
1/2 cup sugar
1 3/4 cup flour
1/2 cup cocoa powder
2/3 cup butter
1/2 cup packing brown sugar
1/2 cup corn syrup
2 tbsp whipping cream
1 cup chopped, toasted pecans
2 oz (60g) semisweet chocolate, melted
Line a 13x9 inch metal cake pan with parchment paper and pre-heat the oven to 350 F.
With an electric mixer, beat the butter with sugar until fluffy. Sift the flour and cocoa over top and stir until just combined. Press into lined pan. Bake at 350 F until firm (about 15 minutes).
Filling: In a saucepan, bring the butter, brown sugar, corn syrup and whipping cream to a boil, stirring. Allow to boil, without stirring, until thickened, about 1 minute. Remove from the heat and stir in pecans. Spread over crust. Bake in the center of a 350 F oven until bubbly and the edges are light golden (about 20 minutes). Let cool on rack and drizzle with melted chocolate.
Makes about 40 bars.
