Oops! I missed yesterday. I suppose that means I need two recipes! This first one is from Mrs. Fields Cookie Book, and is a very quick and easy alternative to chocolate chip cookies.
2 cups flour
1/2 tsp baking soda
1 cup brown sugar, packed
1 cup butter, softened
1 large egg
2 tsp vanilla
1 cup chopped pecans
1 1/2 cups semi sweet chocolate chips
Pre-heat oven to 300 F
In a large mixing bowl with an electric mixer, cream together the butter and the sugar. Add vanilla and egg, scraped down the sides of the bowl and mix well until light and fluffy. In a different bowl, whisk together the flour and baking soda. Blend into the butter mixture until just combined. Fold in the nuts and chocolate chips. Spread into a greased 8x8 inch square baking pan, smoothing the top. Bake in the center of the oven for 35-45 minutes or until a toothpick inserted into the center comes out clean.
Cool to room temperature, and then remove from pan and cut into squares. Makes 16 bars.
