Chocolate Coconut Cookies

These are a nice change from your typical chocolate chip cookies!

2 cups flour
1 tsp baking soda
1/4 tsp salt
1 cup butter, softened
3/4 cup brown sugar
3/4 cup white sugar
2 eggs, lightly beaten
2 tsp vanilla extract
1 tsp almond extract
2 cups shredded coconut
2 cups (12 oz) semi sweet chocolate chips
**1 1/2 cups lightly salted, dry roasted almonds, finely chopped

Variation: If you can't find the almonds, omitting the almond extract and using dry roasted peanuts is a good substitution.

Pre-heat oven to 300 F

In a small bowl, whisk together the flour, baking soda, and salt. In a large bowl with an electric mixer, cream together the butter and the sugars. Scrape down the sides of the bowl. Add eggs, vanilla and almond extracts, and then beat until light and fluffy. Add the flour mixture and mix until just combined. Fold in the chocolate chips, coconut, and almonds.

Drop by tablespoonfuls, about 2 inches apart on an ungreased cookie sheet. Shape and squish down slightly.
Bake for about 18-20 minutes, then remove from pan and allow to cool on wire racks.

Makes about 3 dozen.
