Chocolate Chunk Banana Bread

A tasty twist on banana bread-and what a better way to use up those leftover bananas on the counter?

2 eggs, beaten
1 cup mashed banana
1/3 cup vegetable oil
1/4 cup milk
2 cups flour
1 cup sugar
2 tsp. baking powder
1/4 tsp salt
10 oz of semi sweet chocolate chunks, chopped
1/2 cup walnuts

In a large bowl, mix together the milk, eggs, oil, and bananas until blended. Set aside. In a seperate bowl, whisk together the flour, sugar, baking powder, and salt. Add to wet ingredients and stir until just combined. Fold in chocolate and nuts. Pour into a greased loaf pan and bake at 350 F for about 60 minutes, or until a cake tester inserted in the center comes out clean.

Makes 1 loaf, which is absolutely delectable when warm. Yum!
