My friend Audrey shared my love of cheesecake and once a month on our "girls night out" dinners, we often chatted over a slice. This is her recipe for making tiny ones at home! It comes in handy when you just want a few and can freeze the rest.
12 vanilla wafers (or use chocolate wafers)
2 (8 oz) packages cream cheese
1/2 cup sugar
1 tsp. vanilla
Line muffin tins with paper liners. Place one vanilla wafer in each liner. Mix cream cheese, vanilla and sugar on medium speed until well-blended. Add eggs. Mix well. Pour over wafers, filling 3/4 full. Bake 25 min. at 325F. Remove from pan when cool. Chill. Top with fruit, preserves, nuts or chocolate. Be creative!!!
*These freeze really well too, just make sure to top them when you take them out to thaw.
