Zucchini Wheat Muffins

Looking for something healthy? These just may do the trick!

1 small zucchini, grated
1 cup flour
3/4 cup whole wheat flour
1/4 cup sugar
1 Tbsp baking powder
1 tsp grated lemon peel
1/2 tsp salt
1/4 tsp nutmeg
1/3 cup milk
1/3 cup melted margerine
1 egg

In a bowl combine flours, sugar, baking powder, lemon peel, salt, and nutmeg. Stir with a fork and set aside. In a different bowl combine the milk, egg, and margerine. Pour milk mixture into the flour mixture and still until just moistened. Add zucchini and stir gently (don't over do it!).

Bake at 400 F for 18-20 minutes.
