Honey Oatmeal Fruit Muffins


The thing I really like about these muffins is that you can vary what kind of fruit you put in them. The original recipe calls for raisins, but the muffins in the picture have dried papaya and pineapple instead. Dried cranberries, cherries, apples, or apricots would be yummy too. Mix it up and experiment!
1 1/2 cups flour
1 cup quick oats (not instant)
1 cup dried fruit, chopped
1/2 cup bran
1 1/2 tsp cinnamon
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 1/2 cups buttermilk
1/2 cup liquid honey
1 egg
1/4 cup vegetable oil
1 1/2 tsp vanilla
In a large bowl, mix together the flour, oat, bran, cinnamon, baking powder, baking soda, dried fruit, and salt. Stir with a fork. Set aside. In a different bowl, whisk together the buttermilk, oil, egg, honey, and vanilla. Add the buttermilk mixture to the flour mixture and stir until just moistened.
Divide batter into 1 dozen paper lined (or greased) muffin cups. You can sprinkle the tops with oats if you wish, I had forgotten that step. Bake in a pre-heated 375 F oven for about 20 minutes, or until a toothpick inserted in the center of a muffin comes out clean.
