Apple Date Nut Muffins

1 1/2 cups all purpose flour
2/3 cup brown sugar, packed
1/2 cup rolled oats
1 Tbsp baking powder
1 tsp cinnamon
1/2 tsp salt
1/8 tsp nutmeg
1/8 tsp ginger
1 cup coarsely chopped apples, peeled and cored
1/2 cup chopped walnuts
1/2 cup chopped, pitted dates
1/2 cup melted margarine
1/4 cup milk
2 eggs

In a bowl mix together the flour, brown sugar, oats, baking powder, cinnamon, salt, nutmeg and ginger. Whisk together with a fork. Set aside. In a different bowl, combine the milk, margarine, and eggs. Add to dry ingredients and stir until just moistened. Fold in the walnuts, dates, and apples. Fill lined muffin cups about 2/3 full and bake at 375 F for approximately 20 minutes.
