Butter Tart Squares

Don't have the time or patience that's required for Butter Tarts? Make these squares, they are so easy (and yummy too)

1 cup flour
1/4 cup sugar
1/2 cup butter, cold (cubed)

Mix the flour and sugar together in a bowl with a fork. Cut in the butter in with a pastry cutter until it resembles fine crumbs. Press into a 9x9 inch square cake pan. Bake at 350 F for about 15 minutes, or until light golden brown.

Meanwhile, make the filling.

2 Tbsp butter, melted
2 eggs, lightly beaten
1 cup packed brown sugar
1/2 tsp baking powder
1/2 tsp vanilla
2 tbsp flour
pinch salt
1 cup raisins
1/2 cup pecans (optional)

Mix the butter, eggs, and brown sugar together. Fold in the baking powder and flour. Stir in the vanilla, salt, raisins, and nuts. Pour over the crust and bake at 350 F for another 20-25 minutes. Let cool before cutting into squares. Makes 1 9x9 inch pan.
