So many people have come to this site looking for answers for these questions.....here you are!
1. Can I freeze butter tarts?
Yes, you can! The one thing that I have to watch for is that I don't stack them on top of each other and end up with a big sticky mess. To alleviate that problem, I freeze them in a single layer on a cookie sheet, and then transfer them to a tupperware, using waxed paper between the layers of tarts. Truth be told, I love my butter tarts straight from the freezer.
2. Why do my butter tarts boil over?
You are filling them too full. Don't put so much filling in there and they should be fine.
3. Do cakes with cream cheese icing freeze well?
In my experience icing doesn't freeze well. I usually freeze the cake, then ice it when I take it out of the freezer. Plus the cake is so much easier to ice if it's cold. I put on a 'crumb layer', or thin layer first and stick it back in the fridge to set, then bring it out and put the rest of the icing on. Yummy!
