Chocolate Peanut Butter Crunch

This candy is one of the easiest things I have ever made and also one of the yummiest. Kevin's teachers raved about it last year!

1/2 cup smooth peanut butter
1/4 cup corn syrup
1/2 cup rice krispies

Coating:
4 (1 oz each) squares of semi sweet chocolate, chopped and then melted

In a medium sized bowl, mix together the peanut butter and the corn syrup until smooth. Add the cereal and stir until it's well mixed. Shape into a log about 1 1/4 inches in diameter and 8 inches in length. Wrap in Saran Wrap and chill about 3 hours.

Make ahead: make the logs up to this point and keep in the fridge for up to 2 days.

Slice log into 1/4 inch thick slices, and using a fork, dip into the melted chocolate to coat. Set on waxed paper to set.
Best kept in the fridge in an airtight container, about a week.
