Pre heat oven to 350 F
1 cup Oreo cookie crumbs
2 Tbsp butter, melted.
Combine in a saucepan. Press into the bottom of a 9 inch springform pan. Let refridgerate while preparing the filling.
16 oz of cream cheese, softened
1 cup sugar
2 cups sour cream
3 large eggs
1 Tbsp vanilla
1 1/2 cups semisweet chocolate chips, divided
In a large bowl with an electric mixer, beat the cream cheese until fluffy. Add sugar and sour cream, mixing well. Add eggs one at a time, mixing well after each, and then the vanilla. Gently stir in 1 cup of the chocolate chips and pour batter into the prepared crust. Smooth top and sprinkle remaining chocolate chips over top. Bake 30-40 minutes, then turn oven off and leave cake in oven for 1 hour to set. Remove from oven and chill about 3-4 hours.
*An alternative could be adding rum flavoring instead of vanilla, and topping with toffee chips as well. Yummy!
