When EB was 2 he was facinated by Martha Stewart. He loved to watch her cook. As he got older he would often suggest things to put in various recipes, and every single time, his small suggestion has turned out to be quite yummy. Now that he's 10, he loves to come up with some of his own recipes in the kitchen...although most of the time he'd rather raid my cupboards to preform science experiments. This is a fairly new one, but probably his yummiest yet.
Kevin's Chickpea Salad
1 (19oz) can of chickpeas, drained
1 can of salmon (we use the no skin/bones tuna-like version)
1/2 large tomato, chopped
1/2 cup chopped cucumber
1 carrot, grated
1/2 avocado, chopped
6 fresh basil leaves, chopped (one could use fresh mint, or substitute 1/4 tsp dried basil)
salt and pepper to taste
2 Tbsp Kraft roasted red pepper salad dressing
Basically you just toss it all in a bowl and eat. If the salad is going to sit for awhile, do not add the avocado. Add it only when you are going to eat it right away.
He regularly makes this for lunch, and it's quite tasty!
